The study led by Professor Amrita Ahluwalia of William Harvey Research Institute at Barts and the London School of Medicine as well as Professor Ben Benjamin of Peninsula Medical School suggested the drinking of beetroot as a cure for hypertension. Earlier the vegetable-rich diets were considered to be good due to their anti-oxidant elements. But now beetroot juice can also be of muse in treating blood pressure.
Blood pressure came down within an hour of the intake of beetroot juice. It came down further within 3 to 4 hours and the same improvement continued for the next 24hours.
The nitrate prevalent in the juice is converted in the saliva by bacteria on the tongue, into nitrite. The nitrite containing saliva is then swallowed and is converted into nitric oxide in the stomach. It again enters circulation as nitrite. The lowering of blood pressure is correlated with nitrite levels
in the circulation. Lowering of blood pressure did not take place among those who did not swallow their saliva while drinking beetroot juice.
